Aldea de Don Gil, case of 6 × 2 L bottles

Aldea de Don Gil is an extra virgin olive oil from the Subbética area of Córdoba, between Carcabuey and Priego de Córdoba. A blend of Hojiblanca, Picual and Picudo with aromas of tomato, ripe apple and fig, supplied in a case of six 2-litre jugs.

Aldea de Don Gil is an extra virgin olive oil born beside the Sierras de la Subbética Natural Park in Córdoba, between the towns of Carcabuey and Priego de Córdoba. This case holds six 2-litre jugs, twelve litres of a blend made to accompany the everyday cooking of a busy household with a generous table.

The blend brings together Hojiblanca, Picual and Picudo, three olives deeply rooted in southern Córdoba. The result is an oil of medium intensity, gentle on the palate, with a finish that wakes the senses without taking over.

Nose and palate

Once poured, it releases aromas of tomato and ripe apple, joined by notes of fig and olive leaf. The profile is fruity and rounded, with a green touch that recalls the Subbética countryside in autumn.

On the palate the entry is sweet. It gradually moves towards medium bitterness and closes with a clean, brief peppery touch in the throat. The balance between sweetness, bitterness and pungency makes it an easy oil to reach for at any time of day.

The mix of varieties explains this character: Hojiblanca brings softness and fruit, Picual adds structure, and Picudo contributes a delicate sweetness that rounds off the whole.

Between Carcabuey and Priego

The Aldea de Don Gil mill sits at the foot of the sierra, in a landscape of hillside olive groves and whitewashed villages. The company has focused on continuously improving its production process, and built a modern mill where the oil is both made and bottled.

The Subbética of Córdoba is one of the most respected olive-growing districts in Andalusia. Its relief, altitude and temperature contrasts set the pace at which the olives ripen, and that imprint shows in fruity, balanced oils such as this one.

In the kitchen

  • Sofritos, stews and braises that need an oil with body but no sharp edges.
  • Oven-roasted vegetables and baker's potatoes.
  • Toast with grated tomato at breakfast.
  • Seasonal salads and cold pulse dishes.
  • Doughs, sponge cakes and home baking.

Its medium profile works both raw and over heat, so a single reference covers a large part of daily cooking.

Six two-litre jugs

The case suits large families, households that cook every day, or anyone who likes a pantry stocked for months. Each 2-litre jug is light and easy to handle, and only the jug in use needs to be opened while the rest stay sealed.

To keep its aromas, the jugs are best stored somewhere cool and dark, away from the hob and direct light. Filling an opaque cruet from the jug helps protect the oil from air while it is being used.
