Tasting Elizondo Premium Picual

Deep green in colour, it is striking on the nose for its green fruitiness: freshly cut grass, apple, tomato leaf and a very particular hint of fig leaf appear.

On the palate it is fresh and balanced, with moderate bitterness and pepperiness and an almondy aftertaste that lengthens the finish. An early Picual with great aromatic expression, made to be noticed on the plate.

October Picual

Picual picked in October, before the olives begin to ripen, gives lower yields but far more aromatic oils. Elizondo dedicates its Nº3 Premium range to that moment.

The brand, with roots in Jaén, cares for both the oil and its presentation, with designer bottles made for the table and for gifts.

How to enjoy Elizondo Premium Picual

  • Fish and seafood.
  • Salted and smoked fish.
  • Vegetable soups.
  • Salmorejo.
  • Toast with tomato.

Its green fruitiness lifts any dish with just a few raw drops, especially those with a taste of the sea.

The fig-leaf note is unusual and much prized in early Picual oils: it appears when the olives are picked very green and milled quickly. At the table, that vegetal note goes wonderfully with salted anchovies, smoked salmon or a chilled courgette soup. A thin drizzle is enough to give the dish freshness and depth, especially when added just before serving.

Elizondo Premium Picual: the 200 ml bottle

Elizondo Premium Picual, 200 ml bottle

Two hundred millilitres are enjoyed within a few weeks, with the oil at its best. It is an ideal size for corporate gifts, wedding favours or restaurant tables.

It is sold in boxes of 6, 12 or 24 bottles. It keeps best in a cool place, protected from light.

To get the most from it, taste it raw first, on bread or a simple salad, and then in the kitchen: a good oil shows as much when finishing a dish as when cooking over gentle heat. It is best enjoyed in the months after opening, while its aromas are intact.
