How Isbilya Excellence Koroneiki tastes

Bitterness that stands out above the pepper: an oil with plenty of personality.

Finish

Long and green, made for dishes that call for an oil that makes itself felt.

From the Aljarafe, in under two hours

Isbilya is born in Umbrete, in the Aljarafe district of Seville, from the groves of Aceites Yllanes Marini. The olive trees grow in continuous hedgerows, an arrangement that lets light reach all the foliage so the olives ripen evenly across the tree. Water and nutrients are measured with precision, and the harvest is brought forward to mid-October while the fruit is still green: yield is sacrificed, fruitiness is gained.

Picking takes place in the coolest hours of the day, using only olives taken from the tree, and the whole plantation can be harvested in a single day. In under two hours the olives reach the mill, where the oil is cold-extracted and bottled under an inert atmosphere to keep its aromas intact.

A 500 ml bottle

Isbilya Excellence Koroneiki, 500 ml

The 500 ml bottle is the format for discovering it or keeping it always to hand in the kitchen. It comes in its gift case, which protects it from light and makes it a ready-to-give present. Once opened, close it tightly after each use and keep it away from heat.

At the table

Its marked bitterness calls for dishes with personality: chargrilled meats, pulses, ripe tomatoes with coarse salt, aged cheeses, sautéed mushrooms or a thick salmorejo. A drizzle at the end over a vegetable soup or roast potatoes transforms the dish completely.
