Jabalcuz Early Harvest Picual takes its name from the mountain overlooking Los Villares, in the Sierra Sur of Jaén. It is made from green Picual olives selected in October, and its deep green colour announces an extra virgin olive oil full of nuances: freshly cut grass, tomato, fig leaf and almond.

On the palate it is beautifully balanced, with small bitter and peppery touches that give power to the whole without taking away its elegance. It comes in a 500 ml glass bottle that looks good on any table.

The Sierra de la Pandera cooperative

Jabalcuz is the brand of the Sierra de la Pandera Andalusian cooperative, created in 2004 from the merger of the San Juan Bautista and Nuestra Señora del Rosario cooperatives, both from Los Villares. Its members grow Picual on the slopes of the Sierra Sur of Jaén, a mid-mountain setting that gives fresh, aromatic oils.

The Early Harvest range is the most carefully crafted: the olives are picked green, only selected fruit is milled and the oil keeps all its character.

How to enjoy Jabalcuz Early Harvest Picual

A 500 ml glass bottle

The half-litre size makes it possible to enjoy the oil at its best, while its fruitiness is liveliest. It keeps best tightly closed after each use and stored in a cool cupboard, away from light and the heat of the hob.

To get the most from it, taste it raw first, on bread or a simple salad, and then in the kitchen: a good oil shows as much when finishing a dish as when cooking over gentle heat. It is best enjoyed in the months after opening, while its aromas are intact.
