Tasting and serving

Green fruitiness with notes of olive leaf, tomato plant and fig tree. Dense and persistent on the palate, with medium-high bitterness and pungency. Drizzle over tomato toast, roasted vegetables and grilled meat.

San Miguel cooperative, in the Montes de Toledo

La Galinda is the oil of the San Miguel cooperative of Navahermosa, a village in the Montes de Toledo where Cornicabra groves sit alongside Mediterranean scrubland. Members bring their olives to the cooperative mill, which makes and bottles the oil at origin.

It is a village oil in the best sense: made by the families who tend the trees and intended for everyday cooking. Its labels speak of the Montes de Toledo, a landscape of oak, rockrose and olive trees between the Tagus valley and the Cabañeros national park.

In the kitchen

  • Toasted bread and migas.
  • Tomato and onion salads.
  • Manchego cheese.
  • A finishing touch for roast lamb.

In this size, it is best kept for raw use to appreciate its character.

La Galinda Picual: 4x3l

La Galinda Picual

The case brings together several units of the same product: one is opened at a time and the rest wait sealed, away from light, until their turn.

It is the format for people who cook every day: a cruet is filled from the large container and the rest is kept tightly closed, in a cool place away from light.

To get the most from it, taste it raw first, on bread or a simple salad, and then in the kitchen: a good oil shows as much when finishing a dish as when cooking over gentle heat. It is best enjoyed in the months after opening, while its aromas are intact.
