The oil

Early-harvest Picual: an oil with character and green fruitiness, with the bitterness and pepperiness typical of the variety; it shines raw and holds up well in cooking.

Lubrín, in the Filabres mountains

Raíces de Almajalejo comes from Lubrín, an inland village of Almería looking onto the Sierra de los Filabres, where Agrícola García grows its olives and makes its oil in limited quantities.

The house harvests early, with green and turning olives, and extracts the oil cold and by mechanical means only. Its groves are in conversion to organic farming, as the label states, so the oil is not yet sold as certified organic.

Format

Raíces de Almajalejo Picual, 20 × 250 ml (5 L)

Dark glass bottle, convenient for the table. This format brings together 20 identical units as sold by the producer (5 L in total); the price is for the whole set and the photograph shows one real unit. Once opened, keep it in a cool, dry place away from light.

To get the most from it, taste it raw first, on bread or a simple salad, and then in the kitchen: a good oil shows as much when finishing a dish as when cooking over gentle heat. It is best enjoyed in the months after opening, while its aromas are intact.

At the table

Toast, salads, roasted vegetables, stews and fish; raw, it shows its early-harvest freshness.
