Nobleza del Sur, from Castellar
Behind Nobleza del Sur is Aceites Castellar, a family company that handles the whole process: growing its olive groves, harvesting, milling at its mill on the Sabiote road, storage and bottling. Each year they select the fruit from their family estates and pick it at the optimum moment.
Novo is the freshest result of that work: the oil from the first days of the season, made from the olives of century-old native Picual trees.
How to enjoy Nobleza del Sur Novo Picual
- Freshly toasted bread with a few drops and flaky salt.
- Sliced garden tomatoes, with nothing else.
- Red prawn or beef carpaccio.
- Vegetable soups and gazpachos, as a final touch.
- Fresh cheeses and ricotta.
A bottle for the new season

An early-harvest oil shows its greatest aromatic intensity in the first months, so it is best enjoyed generously, especially raw. The bag makes it a ready-to-give present. It only needs to be kept closed, away from light and heat.
