Guardián de los Trofeos

Vilches looks out over the world’s largest sea of olive trees, the province of Jaén. From there, ARSA Alimentación makes Guardián de los Trofeos from olives picked in October, still green, and extracted cold.

It is a low-yield early harvest, the kind that takes a great deal of effort for every litre, and it shows when poured: a vivid colour, intense green fruitiness, and bitterness and pungency arriving together, as in freshly pressed oil. It has the presence of a gift, and just as much of a place in your own pantry.
