Monteolivo

Aceites Monteolivo runs its mill, La Pastira, in Villanueva de la Reina, in the Jaén countryside. Every autumn it presses the olives of more than four hundred local farmers.

That shared effort produces an extra virgin that is never saved for special occasions: the one always beside the stove, poured without measuring over toast and used to finish every stew of the week.
