Baeturia Black Garlic, Flavoured olive oil 250 ml

EVOO condiment flavoured with black garlic: medium fruitiness, balsamic fragrance, gentle bitterness, notes of toasted garlic and liquorice.

Black Garlic: a hint of liquorice in an Extremaduran oil

Black garlic is ordinary garlic slowly matured under controlled heat and humidity until it turns black, soft and sweet, with a liquorice-like flavour and none of the sharp smell of raw garlic. Baeturia pairs it with its extra virgin olive oil in this condiment: on the nose, medium fruitiness combines the green notes of the oil with the balsamic fragrance of black garlic; on the palate, gentle bitterness and pepperiness give way to a light flavour of toasted garlic and liquorice.

This is a flavoured olive oil (prepared condiment), not a pure extra virgin olive oil; it keeps its natural colour.

Oil from Extremadura

Baeturia takes its name from the ancient region the Romans placed in the south of today’s province of Badajoz, a land of dehesa pastures, holm oaks and old olive groves. From there, the house makes extra virgin olive oils from Extremadura’s own varieties, such as Morisca, Carrasqueña and Manzanilla Cacereña. Its oil is cold-extracted at 22 ºC on the same day the olives are picked, to keep all the freshness of the fruit in the bottle.

In the kitchen

It works over grilled meats, roast chicken, mushrooms, risottos, pasta, sautéed vegetables and toast with fresh cheese. A final drizzle over pumpkin soup or chicken canapés adds depth without any other ingredient.

Use and storage

This is a finishing oil, not a frying oil: its aroma shines when added raw, at the last moment, over food already on the plate. A few drops or a fine drizzle are enough, as it carries a lot of flavour. Once opened, close the bottle tightly after each use and keep it in a cool place away from light so that it keeps its aromas for longer.
