Jaén is the world capital of olive oil: a sea of olive trees stretching to the horizon and hundreds of mills, from large cooperatives to small family estates. With so much choice, the question is inevitable: what is the best olive oil from Jaén? There is no single answer, but there are clear signs of a great Jaén oil. Here they are.

Jaén, the land of olive oil

In Jaén the olive tree covers almost everything: the farmland, the hills and the Segura, Cazorla and Mágina mountains. The province produces a huge share of Spain’s olive oil, mostly from one dominant variety, Picual, which gives green, intense and very stable oils. Yet within that apparent uniformity there is great diversity: altitude, soil, harvest timing and each mill’s way of working completely change the result.

The keys to a great Jaén olive oil

  1. Extra virgin, alwaysIt is the only category with no defects in the tasting. Everything else starts here.
  2. Early harvestOlives picked green in October and November give the most aromatic oils, richest in natural polyphenols. We explain it in our guide to the olive harvest.
  3. Fast millingThe best mills process the olives within hours of picking.
  4. Identified originAn oil that tells you which mountains, estate or mill it comes from usually takes more care at every step.
  5. Recent harvestOlive oil is fruit juice: the more recent the harvest, the livelier it tastes.

The best olive oil from Jaén is not the most expensive or the most awarded: it is the freshest, the best made and the one that suits your cooking.

The three Designations of Origin

Three Protected Designations of Origin certify oils from the province, with controls on area, variety and production:

PDO

Sierra de Segura

Mountain groves in the north-east of the province. Fresh, aromatic and balanced oils.

PDO

Sierra Mágina

Around the Mágina massif in central Jaén. High-altitude Picual, intense and complex.

PDO

Sierra de Cazorla

On the slopes of the Cazorla mountains. Fruity oils with a good balance of bitterness and pungency.

No PDO

Gems outside, too

Many excellent mills on the plains belong to no PDO and still make superb oils.

Awards and distinctions

Every year the Jaén Provincial Council selects the oils that represent the province with the Jaén Selección distinction, and many Jaén oils feature in national and international competitions. Awards are a good sign, especially when they repeat season after season, but remember they reward a specific batch from a specific harvest.

A tip

Check the season of the award. A medal from three harvests ago speaks well of the mill, but not of the oil in front of you.

Cooperatives and family mills

In Jaén, most oil is made in cooperatives that bring together hundreds of growers. Many have made huge leaps in quality and bottle excellent early-harvest extra virgin. Alongside them, family and estate mills control the whole process, from tree to bottle, and usually work small, carefully tended batches.

Cooperative

  • Large volumes and fair prices.
  • Premium early-harvest selections.
  • Ideal for everyday oil.

Family or estate mill

  • Small batches and full traceability.
  • Signature oils, often single-variety.
  • Ideal as gifts or for raw use.
