Gentle on the palate, firm in character

Texture is the first thing that stands out: smooth, almost creamy, with a sweet start that invites another taste. Then Cornicabra shows its characteristic bitterness, well integrated into the whole.

The final pepperiness is delicate and leaves the palate clean, ready for the next bite of roast or migas. It is a Cornicabra of the old school, with no artifice.

San Miguel cooperative, in the Montes de Toledo

La Galinda is the oil of the San Miguel cooperative of Navahermosa, a village in the Montes de Toledo where Cornicabra groves sit alongside Mediterranean scrubland. Members bring their olives to the cooperative mill, which makes and bottles the oil at origin.

It is a village oil in the best sense: made by the families who tend the trees and intended for everyday cooking. Its labels speak of the Montes de Toledo, a landscape of oak, rockrose and olive trees between the Tagus valley and the Cabañeros national park.

In the kitchen

  • Toast and migas from La Mancha.
  • Pisto and vegetables.
  • Roast lamb and suckling pig.
  • Game stews.
  • Salads.

Its smooth texture makes it very versatile, raw and in cooking.

The household litre

One litre is a comfortable amount for daily cooking: it lasts a few weeks and takes up little space. Its price makes it possible to use extra virgin for everything, from breakfast toast to stews.

For greater use there are 3 L and 5 L jugs. It keeps best tightly closed, away from heat.
