La Galinda

La Galinda comes from Navahermosa, in the Montes de Toledo, made by the San Miguel cooperative. It is mountain oil from La Mancha, from groves growing between scrubland and pasture.

Its Picual smells of olive leaf, tomato leaf and fig tree, and on the palate it is dense and lingering, with medium-high bitterness and pungency. A few drops are enough to lift roasted vegetables or tomato toast.
