Half a litre of Cornicabra
On a slice of bread, Cornicabra comes across sweet and silky. Then its characteristic bitterness appears, present but friendly, giving the oil a very recognisable personality.
The finish is a delicate pepperiness that cleanses the palate. It is a balanced oil, with the character of the Montes de Toledo and the gentleness the everyday table calls for.
San Miguel cooperative, Navahermosa
La Galinda is born at the San Miguel cooperative of Navahermosa, a village in the Montes de Toledo surrounded by Cornicabra groves and Mediterranean scrub. Members bring their olives to the cooperative mill, which makes and bottles the oil at origin.
It is an oil made by the families who tend the trees, designed for everyday kitchens.
In the kitchen
- Toasted bread and migas.
- Tomato salads.
- Roast lamb and suckling pig.
- Pisto from La Mancha.
- Aged cheeses.
At the table, next to the bread, is where its sweetness is best appreciated.
In the Montes de Toledo it is customary to finish migas and gachas with a generous drizzle of raw Cornicabra, and this oil lives up to that tradition: it adds flavour without masking the other ingredients.
The 500 ml bottle
Half a litre fits in any cruet and is finished within a few weeks, with the oil always fresh. It is the ideal size for trying La Galinda before moving to a jug.
The brand is also sold in 200 ml, 1 L, 3 L and 5 L. It keeps best protected from light and heat.
