Cornicabra in miniature
A little on bread is enough to recognise Cornicabra: it enters sweet and silky, and soon that bitterness so typical of it appears, firm but never harsh.
It finishes with a delicate pepperiness in the throat. Tasting it this way, raw and in small amounts, is the best way to understand why in the Montes de Toledo no other olive will do.
San Miguel cooperative, in the Montes de Toledo
La Galinda is the oil of the San Miguel cooperative of Navahermosa, a village in the Montes de Toledo where Cornicabra groves sit alongside Mediterranean scrubland. Members bring their olives to the cooperative mill, which makes and bottles the oil at origin.
It is a village oil in the best sense: made by the families who tend the trees and intended for everyday cooking. Its labels speak of the Montes de Toledo, a landscape of oak, rockrose and olive trees between the Tagus valley and the Cabañeros national park.
In the kitchen
- Toasted bread and migas.
- Tomato and onion salads.

In this size, it is best kept for raw use to appreciate its character.
A 200 ml bottle
The small bottle fits in any bag and is perfect for trips, simple gifts or trying Cornicabra before buying a larger format. It is soon finished, so the oil is always enjoyed fresh.
La Galinda is also sold in 1 L, 3 L and 5 L. It keeps best protected from light.
