The character of Cornicabra

This variety, born in the centre of the Iberian Peninsula, gives oils with a recognisable bitterness that here is balanced by a sweet entry and a smooth texture.

The pepperiness arrives at the end, delicate, and its stability means the oil behaves well both raw and in the pan, something much appreciated when buying a large jug.

San Miguel cooperative, in the Montes de Toledo

La Galinda is the oil of the San Miguel cooperative of Navahermosa, a village in the Montes de Toledo where Cornicabra groves sit alongside Mediterranean scrubland. Members bring their olives to the cooperative mill, which makes and bottles the oil at origin.

It is a village oil in the best sense: made by the families who tend the trees and intended for everyday cooking. Its labels speak of the Montes de Toledo, a landscape of oak, rockrose and olive trees between the Tagus valley and the Cabañeros national park.

In the kitchen

  • Fried potatoes and fish.
  • Roast lamb and suckling pig.
  • Game stews and pulses.
  • Home-made preserves in oil.
  • Salads and migas.

Five litres make it possible to use extra virgin even for frying.

The five-litre jug

Five litres cover many weeks of use in a household and are the standard size in bars and restaurants. The price per litre is lower than in small formats.

The jug is best kept in a cool, dark place, serving from a cruet. For hospitality there is a box of three 5 L jugs.
