A family of olive growers from Jaén

Aceites Padilla makes extra virgin olive oil in Jaén from its own family groves. Alongside Picual, the province’s leading variety, the family has planted Italian varieties rarely seen in Spain, such as Taggiasca and Carlesca, to offer different profiles with the same care at harvest and in cold extraction.

The oil

Carlesca, also known as Don Carlo, is an Italian variety from Umbria. Padilla grows it in a young plantation in the province of Jaén; the olives are picked in early November and cold-extracted at 22–24 ºC the same day. It is mid-green; on the nose, medium green-olive fruitiness with fruity, citrus and herbal notes; on the palate, a light entry, medium body and bitterness more pronounced than pepperiness.
