A family of olive growers from Jaén

Aceites Padilla makes extra virgin olive oil in Jaén from its own family groves. Alongside Picual, the province’s leading variety, the family has planted Italian varieties rarely seen in Spain, such as Taggiasca and Carlesca, to offer different profiles with the same care at harvest and in cold extraction.

The oil

Taggiasca is an Italian variety from Liguria. The Padilla family planted it on one of their plots in March 2015, the first planting of this variety in Spain. The olives are picked in the first days of October and cold-extracted at 22–24 ºC the same day. It is intensely green; on the nose, intense green-olive fruitiness with fruity and herbal notes; on the palate, a smooth entry, light body, light bitterness and pepperiness and an elegant aniseed finish.
