Melgarejo

Pegalajar looks onto the Jaén sierra, and on estates such as El Cuchillejo Melgarejo tends every olive tree all year round. Harvest begins in early November so the olives reach the mill fresh and whole, and the oil rests in stainless steel under nitrogen until it is bottled.

Picual, Arbequina, Hojiblanca, Frantoio and the Composición blend make up one of the most complete ranges in Jaén. Working through it is the best way to understand how much an oil changes with the variety, without leaving the same mill.
